A Bit Dark, a Bit Serious, but Sweet in Every Crumb: Chocolate Liquorice Cake

Achieving cakes that appear involved and serious is not always the question of methods and baking knowledge but quite often a well established or surprising flavour combination, that happens to cause a craze. Liquorice and chocolate is one of those pairs in baking that will certainly not make everyone fall in love, but it will certainly prompt everyone not to forget it in a rush…The taste of liquorice is like a sharper, sweeter version of cinnamon but without its forceful character. It adds an extra layer of almost salty sweetness which – even though it is subtle – has the ability to pierce through the taste of chocolate. This is an easy chocolate cake, meaning the requirement of a lazy baker only, just dunking all the ingredients into a bowl and mix. The cake will be lovely and soft with a dense, fudgy texture that is not too heavy. The secret of achieving the real sophisticated flavour experience is letting the cake to sit in an airtight container for a day before icing, as the liquorice note will get stronger and deepened.


225 g glutenfree flour
300 g caster sugar
1 tbsp honey
100 g cocoa powder
2 tsp baking powder
2 tsp bicarbonate of soda
2 eggs
200 ml coconut milk
120 ml vegetable oil
2 tsp vanilla extract
2 tbsp liquorice root powder
100 ml black tea

Preheat oven to 180 C, prepare the baking tins. In a large bowl, beat all the ingredients except the tea. Gradually add the tea until mixed in smoothly to achieve a homogeneous, rather liquid batter.Place the batter into the tins and bake for about 30-35 minutes. The cakes will be done when a skewer inserted into the centre comes out clean. Allow to cool (and possibly rest for a day before icing. To make the icing mix enough boiling water (will depend on the type of icing sugar used) with 5 tbsp of icing sugar to achieve a thick but runny consistency.
