Fairy Tales are Real: Magical Homemade Chocolate Kiss Bonbons fit for Sleeping Beauty’s Prince

Adults all have learned (not necessarily accepted) that life is not a fairy tale. Worth living? In Sleeping Beauty, the lovely princess falls asleep when she pricks her finger on a spindle.  She sleeps for one hundred years when a prince finally arrives, kisses her, and awakens her mind and heart.  They fall in love, marry, and  live happily ever after.  However…Some say, the original tale is not so sweet, but rather horrifying…the young woman is made to fall asleep because of a prophesy, rather than a curse.  The king (not the charming prince) seeing her asleep, takes advantage. After nine months she gives birth to two children, L’Aurore (Dawn) and Le Jour (Day), while she is still asleep.  One of the children sucks her finger which removes the piece of flax which was keeping her asleep.  She wakes up to find herself being a mother of two kids. Magical?

Magic does not just exist as a given right in life, nor it is inherited. Finding and having the magic is a complex combination of one’s conduct, personality and nurture. The magic of life is each breath a person takes. Finding the magic of life is to enjoy each breath of self and all living creatures, big and small, and to  feel a sense of awe to the wonder of it all. Living the magic of life is to feel emotions, laugh and cry , love and be, suffer and win, all on full power. Knowing the magic of life is to really understand the difference between loneliness and connection . Preserving  the magic of life is  showing others self-love and respect for Mother Nature.

Therefore, magic is being honest, positive and true every day in life. And finally, magic interprets to one words: chocolate…Worth living!!!


How to temper chocolate

Melt the dark chocolate in a clean, dry bowl set over simmering water/bain-marie, to about 46º-49ºC (if desired to complete this in the microwave, use 30 seconds intervals stirring between each interval). Remove from heat and let it cool to the low 27ºC. Place a good-sized piece of solid (and tempered) chocolate, ‘seeding’ the melted chocolate with beta crystals. While cooling, stir frequently, which motion equals good crystallization/tempering. Following this, bring the chocolate up to the perfect temperature, 31º-32ºC for dark chocolate, 30º-31ºC for milk chocolate.  Remove what’s left of the chunk of ‘seed’ chocolate and use to fill mould shapes.  Throughout the process remember to avoid allowing the chocolate heating above 32ºC,  as it may result in having to  begin the process all over again. If it drops below the temperatures, rewarm it gently.
