A Dog-lover’s Triple Cholocate Cupcakes

Statistics show that the vast majority of people love chocolate… the rest of them are probably lying. During the more than 400 years since Columbus became the first European to see cocoa beans, it has come to the forefront of ultimate treats. Chocolatiers have created such delights as truffles, pralines, cakes, and mousses but chocolate is great on its own, with an espresso, or a sweet wine, and is able to rise to any occasion. And, yes, maybe it is true that not ALL people love chocolate. But no-one can hate it…

2 eggs
140 g butter
140 g sugar
120 g self-raising flour
3 tbsp cocoa powder
A pinch of salt
3 tbsp milk
50 g plain chocolate chips
50 g milk chocolate chips
50 g white chocolate chips

115 g cream cheese
115 g butter
2 tbsp cocoa powder
500 g icing sugar

Set the oven to 190°C.

Tip the butter into a bowl and beat it until softened. Add the sugar, mix then add flour, salt, eggs and milk and whisk until the mixture is smooth. Finally fold in the chocolate chips. Use a traditional-style ice-cream scoop, or spoon, to divide the mixture between all the paper cases, alternatively measure about 55 g of mixture into each. Place tin in the oven and bake for 20-22 minutes, until cupcakes are springy on the top. Remove the tin from the oven. Leave the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool.

Mix all ingredients of the frosting and beat it until smooth.
